What does it really mean to evaluate coffee quality?
Coffee Quality Evaluation is more than ...giving a coffee a score. It is a structured way of understanding what is in the cup — how coffee is prepared, smelled, tasted, described, and ultimately assessed.
In this film, we explore the fundamentals of Coffee Quality Evaluation and sensory assessment, from physical evaluation of green coffee to professional cupping and sensory description.
The film introduces the principles of the SCA Coffee Value Assessment (CVA) framework, including:
• Green coffee and physical evaluation
• Sample preparation and cupping mechanics
• Fragrance, aroma, flavour, acidity, sweetness and mouthfeel
• Descriptive Assessment and CATA (Check-All-That-Apply)
• Affective Assessment and quality scoring
• Understanding sensory defects and non-uniform cups
• Why a coffee score is only one part of understanding coffee quality
• What “specialty coffee” means in the context of quality assessment
The goal is not simply to produce a number, but to develop a more consistent and meaningful way of observing, describing, and understanding coffee.

For Nepal, coffee quality evaluation can play an important role in connecting what happens at the farm and processing level with what is ultimately experienced and valued in the cup.
The most important thing is not the score. It is understanding the coffee.
